While doing research for this book I want to write for my seminar in the novel class I'm going to be taking, I discovered this at the top of a local Catholic church's webpage:

Depends--a lot of celiac cuisine is veggie, and one can be a celiac veggie (cuts down on stress and is better for you, if you know what you're doing.) As for vegetarian hosts, I think it just depends on where the host wafers are made...the number of manufacturers is dwindling more and more, but having eaten many host wafers, i'd like to say i'd be surprised if it's anything more than whole wheat flour and water.

the concept behind the host is that you're eating Jesus' flesh. So, technically speaking, yes, they're vegetarian, because they're, like, flour, water, and a dash of tastelessness.
