I have been on a new recipe kick this week. Here are two that have worked out beautifully:

Creamy Pumpkin PastaQuick, easy, and very very tasty. Not the healthiest ever - at least as written - but I bet you could substitute milk for the cream and just simmer a little longer to get the same thickness. (I didn't use pine nuts or puree the sauce out ( Read more... )

How pumpkin-y is the pasta? I love anything pumpkin but Dh is a bit less enthusiastic about things strongly pumpkin!

It's not overly pumpkin-y at all. M. is not wild about pumpkin flavoring either. It's mostly a creamy, slightly cheesy (b/c of the parmesan) sauce with a hint of savory pumpkin. Not at all like melting a pumpkin pie over your pasta. :)

Both of these recipes look delicious, and I happen to have most, if not all, of the ingredients on hand. Since my food budget has been blown for the month by a whole lot of stupid fast food stops, I need to cook from the pantry and freezer for a while. Potato soup and pumpkin pasta sound lovely.
