Caramelized Onions in the Crockpot!

So easy, so delicious!

Chop 4-5 large onions into rings. Place into crockpot with 1 stick margarine or unsalted butter (dot around onions). Place lid slightly askew. Leave on low for 8-14 hours, or until the onions are all a lovely golden brown.

Tips & Tricks:

Have you ever tried this with red onions? Also how about tub margarine/butter? BT dubs I don't care if my house smells like onions either! LOL

No to both, however I don't think either would be a problem. The crockpotters on what_a_crock loved the idea of caramelized red onions too. The important thing is the low & slow heat (and tossing to make sure the heat is evenly distributed).

Can you recommend a butter replacement? I've been handeling the cooking recently and this sounds good.

I used a stick of straight margarine and it worked just fine. You could also use SmartBalance (vegan margarine) or olive oil. stentoriansista is a huge fan of Brummel & Brown's yogurt/butter blend for lower fat. The important thing is to put a good amount in there to keep everything from sticking. The butter adds a nice flavor, but I imagine the olive oil would as well.
