I'm working on our weekly menu and am bored. So I am asking all of you to help me out. What are your go to meals for your family. If you could share a recipe that would be great and very helpful.
We eat a lot of southwestern food at my house- my mom came from AZ and I think that has a big influence on my cooking. Here's a spin off an old favorite- these are seriously the best tacos I've ever had, and since I found this recipe I no longer ever make tacos with a seasoning packet anymore. I also make my own shells, which are much better than store bought. You can also use the meat mixture for taco salads, tostadas, burritos, etc. Make extra and freeze for another day

and one more... this is a more labor-intensive recipe (and very messy), but it's one of Andrew's favorites and I like it better than the orange chicken at places like PF Changs. It's definitely more of a special occasions meal and not something you'd want to make all the time :o

no recipe really.. but make a basic meatloaf and add shredded cheese to it (I use cheddar) and then take a long loaf of french bread, cut it lengthwise so you have 2 'boats'.. pull most of the 'fluffy part' of the bread out (save it to make breadcrumbs or something) but leave enough of a border so there's no holes and then pack the meatloaf in the boats and bake on a foil-lined dish for about 45 min-1 hour Top with more cheese and/or ketchup/bbq sauce if you like, at the end. Cut into pieces and dip in mixture of ketchup/bbq sauce. Yummy!
I just take a lot of recipes and change them up. The other day I was haphazardly making lasagna not really following a recipe adding veggies and a little sour cream to the ricotta. It was so delicious! Campbells and other food brand names have fabulous recipes on their sites though.
