i make a different version myself- i heat up a baguette, stuffed with bri. no butter. in fact, i often use bri as a substitute for butter. makes a nummy lunch, or addition to what's for supper. i don't normally eat cheese, apart from mozarella, but there was something pleasing about soft cheese that made me "hmm" and try it. the taste is yummy, too. (though, not cambert... ugh! too strong!)
I love mild flavoured cheeses. Strong flavoured for me ends at like.. aged gouda! And even then I generally only eat it if it's melted into something.
I haven't had brie in a long time. I used to make really awesome lunches using ham, bri, a little bit of salad dressing (a creamy one, like ceasar or ranch or something similar), sprouts, and brie! put it all in a pita pocket and eat. Sooooo good.

While I'm not likely to make a special trip for this, I will *definitely* make a point to make a stop next time I am out that way!

I love the little place out by Harrison Hot Springs that has organic goat and cow cheeses, but they are pretty limited in what they make and have in stock. I really want to do one of their tours of the farm to see how everything is run, I love the idea of quitting what I do and going to make cheese for a living ;)
