Grass fed beef are cows that are fed completely on grass, no grain. So their environment can impact the flavor of the meat somewhat.
Just a different experience, it doesn't have the intense marbling that Kobe / Waygu does. Still draws a premium since it isn't as mass produced as grain fed beef is.
Yeah I forgot to mention that. I have had Waygu beef a couple of times before and that is supposed to be very similar to Kobe beef... and it is AMAZING. But you definitely pay for it. :)
Lamb is one of my favorites and I was brought up on in, what with my jewish upbringing. Too bad the jewish part didn't take, anyway yeah it can have a strong flavor at times but its so tasty.
I love leg of lamb.
I've not made any buffalo myself, I'm pretty sure I've had it out at restaurants, and I've definitely had bison before which I prefer over buffalo.
Bison tasted like beef to me but with a richer flavor if that makes sense, not necessarily more intense or stronger, just richer. Not sure how else to describe it. Tasty though.
