Roasted acorn squash with cinnamon, nutmeg, ginger and cayenne powder. Pureed it and finished it under the broiler with maple syrup. Roast chicken (various herbs), sauteed snow peas, red bell pepper and carrots (various herbs).
3-egg omelet with red bell pepper, onion and cheddar over some yellow basmati rice. Topped it with sour cream, sriracha and A1 (yes, really) and some black pepper.
Whole wheat linguine, sauteed shrimp, red bell pepper, onion and broccoli and a lemon/lime & white wine sauce.
Really simple shit, that I managed to just nail. Makes me happy.
