As may be obvious, food is a big deal to me. It is a major art form, a way to be creative, a way to entertain friends and family. But, it's also medicine. Is your celery carefully inspected for damage? The 8-methoxypsoralen celery produces when stressed by pests would be a concern to me in that much celery.

Yes, I'm a fan of Bruce Ames and have known the dark side of celery for decades. I've have watched carefully for any skin irritation (mine in particular) etc. I seem to be doing well so far. Clearly the celery is the more powerful of the two plants relative to blood pressure and this corresponds to the papers I've read. And yes, 5 tbsp/day of cocoa may be too much for my system. But the investigations I've looked at had subjects ingesting about 40g/day - oh my.
