I am a complete cooking noob.
For the pancake mix could I just make a pancake mixture with just the dry ingredients?

You could probably just make pancake mix from scratch and achieve the same effect though if you were going to just use the dry ingredients from your own recipe I might suggest leaving in the butter (which I'm just assuming the recipe calls for based off the one my mom uses) just in case.

I'm not a genius cook but I'd imagine you could substitute the sugar with Splenda and use 1% or maybe even Skim Milk and get the same effect... Not too sure 'bout the egg tho.

I can't wait to see if u find a low cal version of this. I'm sure my mom would love it.

Yah that's what I was thinking about doing, I was also going to try it with whole grain and reduced fat pancake mixes as well. Hopefully they still turn out as well as the normal pancake mixes.

There are quite a few vegan substitutes for egg that I have read about before, though I am always hesitant about trying them. I might have to take a day just to make some vegan desserts with them.

I've always found that apple sauces substitutes nicely for eggs, but I'm not sure on the exact exchange rate...
But the recipe blows my mind, thanks for sharing!
