I actually wasn't bowled over by them. They weren't quite pumpkin-y enough, and they were kind of custardy in the middle (which may have been a difference in the waffle iron-hers looks deeper than mine, so more of the waffle got crispy.) That's personal preference, though. Someday I'll experiment with fewer egg yolks/less chemical leavening/less buttermilk.

All that being said, you can't really go wrong with pumpkin and waffles and maple syrup. :)
