eggplant with miso sauce

Next time I won't deep fry the eggplant, I've probably chargrill. Really good with the potatoes too.

oh man, i am so making this one! could you just pan fry (with minimal oil) the eggplant next time around? I got new kitchen knives the other day (chucking out the last of my 'married stuff') and am on a kitchen mission.
