Was given some zuchini by a neighbour so I made bread. Yummy!
Adapted a recipe that I thought I'd share...

Zuchini-Carrot-Apple-Banana Bread

Yield 2 loaves

1 medium zuchini -grated (unpeeled)             3 eggs                                            2 tsp cinnamon (add more if you wish!)

I have never made a zucchini bread recipe that also had carrots and apple in it.

the original recipe called for a lot more oil and a lot more sugar. I thought if I was reducing the oil, I should add more liquidy stuff. Banana fit the bill. Plus Apple and banana were for adding sweetness so I could reduce the sugar amount. I made some more bread today but used some apple sauce instead of grated apple or smashed banana.
This bread is so yummy!

What wonderful substitutions! Apple sauce is grrreat for baking. I made some recently that is just apples; no sugar, no cinnamon, etc. Thank you for explaining your substitutions and why you chose them. :)
