We had what I hadn't already devoured at lunch for our dinner tonight. I have a very happy tummy, and so does she!
Pint of heirloom mini-tomatoes, seeded & halved 1 bag of Israeli Cous Cous, browned in a dry pan & then boiled til tender Half of a white onion, chopped 1 jar roasted red peppers, drained & chopped 1 bottle lemon pepper marinade 3 lbs. boneless, skinless chicken, grilled & diced Drizzle of Extra Virgin Olive Oil
Stir everything together in a giant bowl, chill & serve! Good for breakfast, lunch or dinner when the weather is hot & sticky and you don't want to cook.
