Dessert recipes

I’ve been asked to make a dessert for a church thing for Friday. It’s going to be served with blini (Russian pancake things, I need to make a bunch of these to bring too, and I’m not sure what recipe I’ll use for those either). So it should be light. Lemon bars are actually the fallback--quick, easy, done it tons of times. I'd like to do something creamier/lighter.

Should I mention that despite it being a Friday, we can have EGGS AND DAIRY this week, so anything that includes LOTS of those is ideal?

I've never made this one, but C. sent one home with my youngest during Christmas break that was really, really yummy.

It would be a spoon thing, though.

Hm. I don't have any particularly good ideas for light things that involve eggs/dairy and that come in sliceable formats, but I would say that you could "fancy up" a lemon bar recipe by topping it with a soft meringue (as in a lemon meringue pie, but way shorter), or do a lime bar + meringue potentially?

My perennial fallback is a shortbread jam tart (make shortbread dough. press into bottom of pie tin. bake until almost done. top with jam (or jam+fruit, i.e. kiwi slices and strawberry jam). bake until golden brown.). Or there's fruit-flavored marshmallows?

On the scoopable side, custards, puddings, trifles, panna cotta, and mousse can all be made light-ish with ingredient substitutions or combinations (i.e. a rich custard, but over fruit).
