Cross posted. Time to get french, and technical. This sounds complicated, but really isn't. It's the basis of every cream sauce you've ever had, for the most part, and IMO is one of the 2 most important tricks to cooking (the other being mirepoix, and combining them is even better).

I linked to this in my last post, and feel the need to elaborate. Mirepoix is, like wikipedia says, the holy trinity of french cooking. However, this doesn't mean you must limit it to french cuisine.
