Today is going to be a cooking marathon! So far I know I'm making:

  • Pancakes (for breakfast)
  • Steel Cut Oatmeal (a huge pot to use for breakfast throughout the week)
  • "Warp-Speed Pumpkin Butter" (to put in my oatmeal)
  • Roast Beef with Mashed Potatoes, Gravy, and Corn (for dinner)
I haven't figured out what I'm making for lunch yet, but I should probably ( Read more... )

I made the pumpkin butter, but I substituted pumpkin spice (2 teaspoons) for all of the spices listed ... it turned out really good. Next time I think I will add 30 seconds to the microwave time but put the temp setting on level 8 - and add another 1/2 teaspoon of spice to the mix.

Yum - I had it slathered on whole grain toast with a schmear of cream cheese....mmmm,mmmm, good!

Oooh, thanks for posting how it turned out. I think I'll add extra spice too...I love spicy pumpkin stuff. Eric and I just finished eating Low Calorie Apple-Cinnamon Pancakes (low calorie, but GOOD). If you like pancakes you should try them. The consistency of the batter was a little thicker than I like it to be, so I added a bit more milk, but next time I think I'd add extra applesauce to make it taste more apple-y.

We love pancakes, but I had Jason stop making them because they are too high in carbs and sugars for me - something I'm generally trying to cut out of my diet as much as possible.

These look good though.... I will mention it next time Jason says he's interested in having pancakes. I will have to add apple sauce to our grocery list.. :)
