Irish Stew

Tomorrow is a colleague's last day at work. As she is moving to Ireland (the lucky bitch), we're doing an Irish theme (natch) for her going away party. I volunteered to make Guinness Beef Stew. Has anyone ever made this? The recipe suggests that I serve it over mashed potatoes, but that seems a bit much as there are already 2 lbs. of potatoes in ( Read more... )

I have, of course, made this. We usually have it as is, or with dumplings (but hrrm, proper British/Irish dumplings! Probably listed soemwhere as suet dumplings - which I use vegetarian suet to make).

Have seen it made into a pie, or served with boiled potatoes though.

I ended up just serving it in a bowl by itself. They loved it. Guess I'll be making that again. :)
