Having been to culinary school, I can say only this: you don't need the piece of paper to be a successful chef. Experience is WAY more important. Culinary school is fun, but there's no need to do it, unless you've got a couple thousand burning a hole in your pocket ( ... )

thanks... you really felt like your school was a waste of time, though? id enjoy a diploma but i am in it for the education. just through meeting people who have been to culinary school i admire their knowledge of food sciences way more than people who havent, even though those people have tons of restaurant experience. so i do have some genuine interest in school for that reason. if you do know of any nice schools i do have some money, not really to burn but... you know...

It wasn't a waste of time, per se... but it was a waste of money. I'm sure you can do a vocational school thing for pretty cheap, and I assume that an associates degree in culinary arts must have some academic guidelines. Try hard to find a community college. There's no reason to go to an expensive fancy school, unless you're planning on becoming a rockstar chef. (Then go to the CIA in NY.)

I know there's a healthy cooking school in Boulder, Colorado, and my friend just went through one of those health food schools somewhere in North Carolina. There are some in NYC. Of course, I'm talking about more "alternative" cooking schools, which might not be what you're looking for, but you would still learn some food science. If you want me to find the names, I'd be glad to ( ... )

culinary institute of america is like, the one, or whatever, i know, but i dont really want to go to some snobby place.
not like you asked for all my replies on this stuff, but, you know. were you thinking of cia when you wanted to move to san fran?

If you're talking about the California Culinary Academy, never suggest it to anyone.
