OM NOM NOM!! (Oooh, last night I made mac and cheese with four cheeses and a rotisserie chicken mixed in. YUM.)

Nom nom mac and cheese is so awesome. I saw some Food Network show this week where it had lobster in it! Made with gruyere.
That sounded good.

We do chili on Christmas Eve-- and yes, we cook that too. We joke that since we do all of the major cooking, people should drive 16 hours to come to OUR house.

grandma was a professional cook, her son was head of dietics at Beaver Hospital and was friends with the dude who came up with cheese sticks (he died during his quadrple bypass, go figure), and we're Italian. We're a food family.

the whole driving thing also plays a role in why we moved to eating dinner at home and coming out for one big party (not necessarily christmas day either, whenever we can manage it)

Love this so much I got it memorized:
2 cans non-marinated artichoke hearts, chopped
1 cup cream cheese
1 cup mayonnaise
1 cup shredded Parmesan cheese
1 jalapeño, diced
3 cloves of garlic
salt/pepper to taste

Mix together and bake 30 min at 350. Sprinkle some extra Parmesan on top for nice crust. I've done it with no-fat cream cheese & mayo and it works just as well. It's actually less oily that way. If you're good, eat it with chopped veggies, if not, eat with corn chips.
