When I get a bit more organized I would love to get into pickling and canning and jam-making. It all seems so productive and worth it!

You really should give it a shot. Pickling, and I assume many others things involving the same process are super easy. Jam making always seemed harder to me, and is definately more time consuming. Even that is worth learning if you like working in the kitchen though. It's all satisfying, fun, and pays off long term.
