Do you have any or know where I might find recipes for nutritious dishes that could be prepared at home in -- hum, thirty minutes to an hour? I'm trying to incorporate healther and more filling meals into my daily routine by, uh, preparing healthy, filling lunches to bring to work the night before I go to work. SMOOTHIES. SMOOTHIES ARE THE BEST LUNCHES EVER. QUICK TO MAKE, FILLING, AND HEALTHY AS ANYTHING AS LONG AS YOU DON'T DUMP A TON OF SUGAR AND SYRUP INTO IT. Just pick up a lot of those frozen fruits and some orange juice and a blender and voila!

I SECOND THE SMOOTHIES. and um, salad's are super easy too really. and low-fat versions of things (though be careful, these usually have loads of salt added). if you know of any jamba juice's nearby, GO FOR IT. !!!

also: they say a tiny square of dark chocolate a day is good for your heart.

Variety is the key! I get sick of food way too fast when it comes to just trying to grab a quick meal.

Easy, healthy recipe - noodles, your favorite veggies, and some cubed cheese tossed with Italian dressing. This one sits fairly well over night.

I am a big fan of pita bread + various spreads, like....pimento cheese or almond butter or nutella. That is how I live at school. XD Not necessarily the best thing for a consistent diet, but they're tasty and filling.

My lunches, when I do bring them to work, are usually leftovers from dinner. I don't know what your budget is like and whether these are the kinds of food you eat, but the great thing about recipes is that you can chop and change to suit your needs. :D

How to make the perfect... quite a number of meals, actually. The pasta recipes are great for lunches.

101 Simple Meals for Summer -- some of them are good to go as lunches, others will need to be modified.

Penne with anchovies and capers.

Watch Jane Cook is no longer updated, but there're two salad recipes in it that look good as lunches.

This is a good alternative to potato salads with a lot of mayo.

Curry and rice or bread are good lunches, too -- curry tastes better the next day, and rice keeps well overnight if you store it in a separate container. There are some easy recipes at Hooked on Heat (check out the sauteed potatoes and egg masala), Naughty Curry, and Mahanandi. Though you'll have to dig around quite a bit at the last two blogs.
