VERY interesting. I BADLY want that egg separater! I mean, I have one, but the little chick is infinitely more kawaii! My lemon cheesecake is pretty fluffy, but it has freshly-squeezed lemon juice, which gives it lift.
I find it interesting that they don't do a graham cracker crust, which is fine. But to go to the trouble of smoothing out the top when (a) it's going to melt and self-smooth during the bake, and (b) you're flipping the cake over and displaying the bottom! Doesn't make much sense to me. In addition to banging the cake like they do in this video to try to drive-out bubbles, I also move it in a circular motion to even it out, I find that's sufficient.
You are correct, the baker did a double-flip and that is the top that they branded. I'm still amazed that they used a conventional pan, not a spring-form pan for a cheesecake! Very different from the 'conventional' way of doing it. Makes for a much taller end result.

Concerning the flipping, it was to dislodge the cheesecake from the pan. He flipped it a second time to display the top if the cheesecake iirc.
