Well it sounds like you've been seriously busy! Glad to hear about the progress on the job front, though I'm certainly sorry to hear about the useless professors. That's probably one of the things I'm most glad not to be dealing with post university, of course I suppose I just traded it for the occasional useless supervisor, lol. I hope the courses coming the next two semesters are much more enjoyable.
Glad to hear the doggy is settling in well, though the autoimmune issues... I hope they settle down and go away soon. Remember, puppy cuddles are good for stress! I was accepting a lot of kitty cuddles this week as consolation for my arthritis kicking up along with some bad weather, and even when they didn't help the pain they were at least good for the mood. :)
Finally, pumpkin custard? I'm intrigued and curious about the recipe. My wife and I were actually looking through some pumpkin recipes earlier for some new ones to try this year, but I can't say we ran across one for custard. I'd be curious to know what yours is.
Yeah, doggie cuddles are awesome for reducing stress. Artie has her face on the chair between my legs, looking up at me with adoring eyes right now. She's very good for helping me with my anxiety. And warm puppy is good for arthritis.
Pumpkin custard is the easiest thing in the world. It's basically pumpkin pie filling... without the crust. Follow the pie recipe on the back of any can of pumpkin. Use a bit less sugar and a bit more spices. Substitute some blackstrap molasses for some of the sugar to get more flavor. Use a reduced fat condensed skim milk instead of full-fat (the flavor results are the same) and it'll be lower in calories. Either way, you can do the whole recipe with one bowl and one baking dish. Very little mess. Five minutes of prep time. Bake for 45 minutes. Eat. :D
Hmm, I have a recipe kicking around somewhere for a reduced calorie 'crust-less pumpkin pie' which is a similar idea. I haven't made it since I moved across the pond, but it's a similar idea I think. It's hard to get canned pumpkin over here, I've got a couple cans that were brought to me by my mother-in-law when she visited the States last month. Right now I'm trying to find somewhere that sells sugar pumpkins so I can make some of my own purée. You can usually find somewhere selling them around Halloween, but it can be a bit of a scavenger hunt.
Aw, doggies. My former housemate had a mastiff. 200 pounds of sweetness and love. (And drool. OMG, the drool.) My cat was a kitten at the time, and she had that dog completely pwned.
I wish I knew how to can my own food. But for that I'd have to know how to grow my own food, and I'm not good with plants. Although right now I'm trying to make my own applesauce. That's domestic.

He rode on an ambulance for a very long time (maybe 10 years?) and loved it, but he took an ER job a couple of years ago when he was ready for a change and a more stable schedule, and he really likes that, too.
I hope to work the ambulance scene for quite a while, hopefully with the KCK Fire Department. I'd love to work Life Flight eventually. When I get too old for that, my plan is to teach paramedic students.

Learning to grow plants is pretty simple. Start with the ones that are super easy to grow. Maybe one tomato plant, for example. :)

My brother did the fire academy/paramedic thing--he loved it! I'm excited for you starting that soon, too :-)
OH--I love those big dogs. Glad yours is making herself at home. My parents have Great Danes--big lovable doofuses! :-)

Big dogs are the best. I currently have 150 pounds of warm squishy doggie keeping my toes from getting cold. Great Danes are fabulous, too.
