Peanut Butter Blossoms

1 C shortening
1 C granulated sugar
1 C brown sugar
2 eggs
1 tsp vanilla
1 C peanut butter
3 C sifted flour
2 tsp baking soda
½ tsp salt

1. Cream shortening & sugar. Add eggs, vanilla.
2. Stir in peanut butter.
3. Sift dry ingredients, stir into creamed mixture.
4. Drop by rounded tsp onto cookies sheet
5. Bake 350 about 10 minutes. Makes 5 dozen cookies

Snickerdoodles, adapted from Better Homes & Garden

Cream:
1 C butter,room temp (2 sticks)
2 cups sugar

Add:
2 eggs
2 tsp vanilla

Mix together, then add:
1tsp baking soda
2 3/4 c flour

Chill dough for an hour, then roll into balls, and roll in a mixture of:
3 tbs sugar
1 tsp cin

Bake at 375 for about 10 mns

(for today I'm at 1.5 and 2)

In a week, do something for:
body (ex, yoga)
mind (ex, reading something with intellectual content, or learning a new skill)
spirit (ex meditation or volunteer work)
relaxation (hot bath, junk novel, etc)

have temp company interview next tuesday, and potential job lead through a friend, but really the things that make me content: veggie dinner with the girls last night, panda dinner tonight, yoga balance podcast (I'm wobbly but it was fun), doing a full 20 mns on the eliptical even though I didn't originally feel like it (go me!), going back for ( Read more... )
