Ethiopia is still on the Julian calendar; they never got the memo to switch to the Gregorian. So, New Years in Sept. 11th, there’s 13 months, and Christmas is celebrated on our Jan. 7th. It’s 2005. What an adventure you are having! FYI: You say the country is full of cows, if you have access to cream, you can make your own fresh butter. If you place cream in a clean jar or inside of it's own wax cardboard container & keep shaking it until it forms a ball, maybe 5 minutes? It depends upon the cream, the weather, and how much you are making. Anyway.. once a solid ball has formed drain away the buttermilk (which can be used for baking as well) and rinse the butter ball in cold water. Any buttermilk remaining on the butter may make the butter turn rancid more quickly. You may also salt it a bit to help preserve it if it is not being used refrigerated right away.
