We cook with lots of fresh vegetables here in Ethiopia. They’re readily available, generally of good quality, and super cheap. i know you can't *make* Ethiopian here, but we have a couple of restaurants that i'm told are fantastic! Dukem is supposedly the best.

Hehe, yes, there are plenty of restaurants. I was just anticipating the requests to cook something African once people find out I lived in Ethiopia for 18 mo. And...I can't. Not really, anyway. Unless serving popcorn with coffee counts ;).

There's a Dukem in Baltimore (the only Ethiopian restaurant there, so far as I know) and many options in DC. I've only been there once. Dukem is a town just east of Addis, near Debre Zeit. I was there last weekend for our Lenten retreat ;).

Hi! Enjoyed the recipes. The blending machine that you refer to using in the "ice cream" recipe is called an Immersion blender. It is also great for making creamy soups. Thanks for sharing.

An immersion blender! Great, I'll have to see if they sell them in the States and start giving them out as wedding gifts. They're truly awesome, and like you point out, great for soups (that's what we use ours for all the time).

Yes they sell immersion blenders in the US. We discovered banana ice cream a few months ago too. Mmmmm...
