I've been cooking a lot recently for my sister and I.

Day 1: Homemade turkey meatball sandwiches.

Day 2: Chicken tikka masala with brown rice.

The meatballs were mostly successful but a little crumbly.  This always happens whenever I make any kind of turkey whatsoever.  My turkey burgers have the same problem.  Maybe I just don't compact it ( Read more... )

Do you use egg and breadcrumbs to keep your ground meat stuck together?

Yes, I use the exact amount that the recipes tell me to use. Think I should increase the amount of breadcrumbs?

I would say decrease, actually, if they're crumbly, or at least decrease proportionally to the eggs. My mom's meatloaf recipe uses cottage cheese in addition to egg--you might try a little of that as well.
