Before you give up on the thou, get it set up right and then try again. After all, those bikes only make sense on the track, if they make sense anywhere, and if they don't make sense there in the care of a former champion racer, where could they make sense?
Is it track dependant? What's the ratio between 600/750 and litre bike production class lap times? Is it a place that favours flickability over power?
Do you think it's you, being outside your comfort zone and having the challenge of having to learn new stuff to ride the litre bike quickly after years of being the master of your craft, or is it really the bike not being up to it?
I'd say get rid of it if it isn't as much fun to ride as the Gixxer 750, but not before you have mastered it. Because you'll get a sense of accomplishment from learning how to get the best out of it. And because developing new skills is good for our inner wellbeing...

The torque makes sense on the street. A magazine did a test a while back, putting riders of different ability levels on different sized bikes (600 / 750 / 1000). Only the championship winning racer was fastest on the 1000 - everyone else was faster on the 600.

The fastest rider in Northern California right now went the exact same speed that weekend on his CBR600RR and his CBR1000RR. And his 1000 makes almost 200 hp.
