Cheese cheese pasta and cheese

I'm all about the pasta and cheese dishes these days. Last week it was lasagna. Last night I convinced Tessa to make her delicious linguine with broccoli, parmesan cheese, garlic, pine nuts and crushed red pepper. Today I'm making homemade macaroni and cheese with fontina and mascarpone cheese. Later this week we're having cheese ravioli. ( Read more... )

yum. Mac and Cheese is my fav which you are making. Fett alfredo is another fav and Spagetti carbanara is really good too. Carbanara is a cream sauce with cheese in it so that counts right?

I love pasta. Prolly why my kid is addicted to it herself.

Carbonara totally counts!
I forgot about fettucine alfredo. A friend of ours makes it sometimes with chicken and broccoli and it's delicious.
And yeah, pasta and dairy products are the best.

And I forgot that I had stuffed shells last Friday! more pasta and cheese and I didn't even have to cook it! mmmm

Traditional carbonara, omg, so good. The bacon grease and egg yolks are key!

Preheat oven to 350F
cook one pound of penne

combine 1/4 cup flour and 3 cups milk in a large saucepan
Whisk over medium heat for about 10 minutes, or until thick.
Remove from heat

Add 1/4 cup of mascarpone cheese and 2 cups of shredded fontina cheese.
whisk until smooth.
Add salt, pepper, maybe other stuff (I put a bit of garlic powder in this time. A little cayenne would be good if you want it spicy, or mustard powder) to taste.

Stir in the pasta, stir until coated.

Put pasta in a 13x9 inch pan that is coated with cooking spray.
Top with breadcrumbs
Bake for 25 minutes or until bubbly.

Easy and delish!

omg sooooogood. i never would have thought of marscapone! i made very similar last night but i used a mix of sharp cheddar, gouda, fontina, and dubliner (also a cheddar, a nutty irish one) and then a little bit of maytag blue cheese. the blue cheese gives it a lovely kick

i also like cappelini tossed with olive oil, fresh arugula, and a whole bunch of parmesan and asiago. sooooo good. the arugula wilts... its divine. add salt and pepper. yu.

I'm just looking for inspiration for future dinners. What could possibly be mean about that?

by the way, my entire house smells deliciously of the baking cheese.

I love chicken fettuchine alfredo with my homemade alfredo sauce. Creamy AND cheesy!

One of my favourite dishes ever is also one of the simplest, I learned how to make it in Rome. It's a couple of chopped cloves of garlic, browned in several tablespoons of good extra virgin olive oil. You could add crushed red pepper, too. Toss to coat with linguine or fetucine, and grate a ton of parmeggiano reggiano on top. Perhaps a bit of salt and pepper to taste. The key ingredient is really the parm.
