One of my favorite things to make are spinach pies. I cheat a bit.
I use the frozen puff pastry pie shells (you know the little 1 inch ones). I swap out the butter for olive oil, the parmesean cheese for feta and use less eggs sometimes i also add roasted pine nuts.

Either way, very yummy!

I love spinach pie, and adding feta and pine nuts makes just about anything taste better!
