Gnocchi

Does anyone have a recipe for gnocchi that actually stick together? I've tried a few lately with disappointing results.. with both potato and pumpkin, the gnocchi disintegrate on boiling. I have been using a cup of '00' flour and one egg yolk with approximately half a cooked, mashed butternut pumpkin or three large potatoes, with no success. I've ( Read more... )

I'm told the secret is to use old, floury potatoes.

Old floury potatoes are often to be found in our cupboard. With aliens growing out of them. So often, in fact, that I used them last week for the gnocchi and still had a failure :/

You're not over-boiling?

They can be crumbly, but when cooking my recipe says to put them in boiling water and as soon as they float to the top scoop them out and serve.

Thanks - it's probably best to just cook a few at a time so I can watch them and get them out just at the right time. What does your recipe have in the way of flour/eggs to bind it all together?
