Last night, I made a pumpkin cheesecake pie, using the recipe I found on a Keebler graham cracker pie crust. You just whip up (with electric egg beaters) 1 small 15 oz can of pumpkin, 2 eggs, 2/3 cup sugar, 2 8 oz packages of cream cheese (I use the light...1/2 the fat/calories), 2 tsp pumpkin pie spice. Pour it into a readymade keebler graham
