I made home made enchiladas today with home made guacamole . It was long well the hardest part was making the guacamole from scratch. Who would have thought that peeling and halving avocados would be so hard! Peeling avocados? Oh you poor dear. :)

Here's a trick to avocados. Take a decent sized sharp knife and cut them in half around the pit. Twist to remove the top section. You have one with a depression now and one with the seed. Carefully slap the blade of your knife into the seed, then give it a twist and pop it out. It might take a couple of tries. Sometimes I get the seed stuck on my knife, so be careful.

Then score a # pattern into the flesh of your avocado halves, press your thumbs into the middle of the back (the outside) and flip it inside out. Your chunks should come out easily now, and you can trim off any icky bits.

I make a quicky-guacamole by mixing the avocado with salsa. :) You can also make a quick gazpacho by mixing pico de gallo and watermellon.

PS: my husband says my score and flip method is silly and that you should just take a spoon and scoop out the flesh.

But score and flip works well for mangoes.

I so wish I had asked before I ventured onto the peeling process. It was frustrating and messy and next time I will try your suggestion for sure.
