I woke up with this poem in my head the other day... I wonder if I'm plagiarizing Ogden Nash at all. It sounds kind of like something he'd write.
Now I'll be admittin'
I've rightly thought that
What once was a kitten
Is later a cat.
But I don't now think
Where once I thunk
That a baby skink
Becomes a skunk.

For what it's worth, a quick google (using the search terms: kitten cat skink skunk) didn't return anything even vaguely redolent of your lovely little ditty. However, searching for "kitten" & "cat" & "ogden nash" returned this little aphorism: "The trouble with a kitten is that when it grows up, it's always a cat." But no poems. :-)

that is, in fact, the Nash two-liner that I was thinking of. I've seen it in print the way that hitchhiker has it formatted below.
