Truffles:
Heat 1 C. heavy cream in a good saucepan. Stir occasionally. When small bubbles have formed on the surface, turn off the heat and add 2 C. quality semi-sweet chocolate chips. Stir well, until the chips are melted in and the whole thing is smooth. Add spices, extracts, liquor, rinds, nuts.... add more spice than you think you will need
