Lemme give you a chili secret, given to me by WinterRoseASFR who got it from his mom.
Instead of water? Use coffee. Great flavor. It doesn't have to be pricey fancy coffee... Folgers works just fine. And if you use caffeinated coffee, you get geek chili that can keep you up all night. (Best to use decaf if you're making the chili for dinner and you DON'T want to be up all night.) Not to mention if you make extra coffee you get to sit around with a cuppa while the chili does its stewing thing. And that's always nice. :-)
Another good meat to try is venison. That gamey flavor goes very well in chili.

I might try this, except that I violently hate both the taste and smell of coffee.
Cocoa powder and cinnamon both seem like plausible adulterants, and both have had good reports from other people. I just have to remember to make a small test batch so I don't end up with a gallon of something I hate.
Venison, hmm. I might try that, but I'd want to cook up some by itself before I put it in chili. I think I had some a long time ago but I don't remember much about it.
I did make a batch of chili with lamb and lentils. It was interesting but suffered from technical difficulties. I will retry it, but probably not this weekend.

Well, it doesn't make the chili taste like actual coffee. It just adds some depth and smokiness to it.
Venison, personally, I don't think is very good on its own. It's too gamey that way. But if you cube it up and put it in chili, the spices and such work well with it.

A small amount of liquid smoke works for me - it's easy to overdo it imo. I also like using chipotles for the smoky flavor.
I'm not necessarily saying venison would be good on its own, but I'd need to taste it that way before I could use it as an ingredient. One of the side-effects of not using recipes. ;)
