The model I have runs a stripped down version of Fedora 7 called Linpus. You can run the package manager and basically install SSH through YUM. I've had trouble getting sshfs to work (I could mount directories with sshfs, but I had trouble browsing them except as root).
If I get sick of running Linpus, I might install another distro, but I want to wait until people have blazed that trail a little more thoroughly.
Every netbook I've seen comes with Linux or Windows pre-installed, so I think all of them can run ssh. I see lots of little guides to installing OSX on different netbooks, but it's not Apple hardware, so you probably lose the "everything works" feature.
