I've only watched 3 episodes and I am so so very hooked on this show. And I feel dirty about watching it because they constantly use lines of dialog that just shock you, such as "Do we have any Jews working here?" - "Not on my watch!" OMG!!! You can't _say_ that!!! You CAN sub other things (food coloring, turmeric, safflower), but none of them will have the taste of saffron, which is really delicate.

I dunno. I think the price of saffron is often overstated. Yes, it is the most expensive spice in the world, in terms of price/volume, but in real terms it's an affordable luxury. I have a bottle of VERY good saffron -- it was about $20 for the 1 gram bottle, which sounds insane until you realize that the stuff weighs nothing. I use it reasonably often, and I'm in no danger of running out soon.

Sorry, /soapbox. And if you decide to make the dish without the saffron, it'll still be delicious.
