I keep bouncing from healthy diet and drinking lots of water and feeling so much better, to eating far too much stodge and blah. It's stoopid. I find just cutting out wheat on its own makes such a huge difference to how well I eat but it does make lunch options a lot more limited when out and about. I keel over if I don't have lots of protein (plus I like meat too much) so would never go vegan/veggie but I can totally understand the restricting thing.
Do you keep a food diary? I've found it makes me pay much more attention to what I eat, especially when I send it to someone else who I know will pick me up on any rubbish in it! I'm not so good at doing stuff on my own but when I know I can't hide things it's much easier to stick to it. I am working on the whole pretending to be an adult thing :D
