You can run the canner under cold water to get the pressure to drop faster.

How did they turn out?

I think I forgot to thank you for your input on pressure canners--we now have the 12-qt version of yours and it's fantastic. So much vegetable stock that doesn't take up space in the freezer! So many jars of chili that don't take up space in the freezer! So much soup that ... hey, look, doesn't take up space in the freezer! So, thanks--our freezer is psyched, though the pantry shelves are perhaps less enthusiastic.
