I think the answer to cooking any meat is stuff with with goat cheese and grill it. ok spinach and goat cheese. god im pretty much salivating at this idea right now.

crush up some kind of yummy crackers, add some black pepper / crushed red pepper / whatever else you want. Dip chicken in milk or egg, then dip in cracker mix, drizzle melted butter over top, bake in oven. Very yummy.

miss you! are you coming back anytime this spring, or will i just see you next at the LI shower (which has now ballooned to 80 people over 2 days at 2 restaurants)?

i miss you too!!

i wish i could make this, i failed to mention i have nothing that isn't vegan, like milk, eggs, that kind of stuff. and no money to get any of it right now, lol.

I'll probably just see you at the shower, since my parents are planning on visiting me this spring instead of me coming upstate. 80 people over 2 days!? what is going on!!?? haha, and do i get to go to both? j/k.

I'm pretty sure you've already used your chicken, but I love this recipie....
Fiesta chicken....

Plain Yougart
Taco Seasoning
Cheez-its
Chicken

Crush up cheez-its in a bag and then mix with the packet of taco seasoning. Roll your chicken in the plain yougart, then roll your chicken in the cheez-it mixture, and bake (I think 350 for 30....Dunno, I'll have to check).

You can also do a variation with plain ritz or club crackers and ranch dressing mix instead of the cheez-its and taco seasoning. I got this recipie from my 4 ingredient cook-book. Tastes pretty damned awesome!
