The idea of mashed carrots doesn't appeal to me. I mostly eat them raw, or mixed with other vegetables if they are cooked.
However, that recipe is very similar to my recipe for mashed butternut squash. (I microwave the squash until tender, then use the kitchen aid to mash it.) I use half the milk and butter you call for, and cinnamon instead of cumin, but the same idea.
I'm in the raw carrot camp myself, but Noah isn't having it, and he will only eat cooked carrots so far if they are in homemade chicken soup, which it is getting much too warm to eat, let alone make. I'm hoping that maybe I can sneak these into his repertoire - I will probably use cinnamon instead of or in addition to cumin for him.
I'll eat butternut squash any way but raw! Usually I don't get any farther than roasting it with sea salt, pepper, and olive oil, because I just eat it right out of the pan like that before I get to the actual recipe.
Hmm, I'll have to see if I have any broth left to try that. I am sick of making broth! I suppose I could buy it, since it's broth - I have sworn off canned soups but I could make an exception for broth in a box.
