My dad used to make ice cream, and his was usually thin and ice-crystaly. Some Home Shopping Club machine + cook book :\

...now Grampa, his ice cream was legendary (and a fair amount of labor).

My dad used to make it with one of those old hand-crank machines, and we'd all take turns cranking it. I have a nice electric one from Target that you just plug in, no rock salt, no ice, nothing. It's a heck of a lot easier. :)
