As for the food, we probably underfeed Honey. She certainly thinks we do, but we feed her on a routine, as dicetomato mentioned. ticklemerisi handles all feeding actually, but gives her food never more than twice per day and usually only once and not a large amount either. For a larger cat, more food would probably be appropriate, but she won't starve if you ration her food more, so you could just try it and see.
As for the car trips, is she loose in the car or in a cat carrier? I'd highly recommend the cat-in-a-bag routine. Ginny may resist initial bag entry (I think the gnomes came up with a mechanism for that), but once inside, she should mellow out for the ride. Ever tried it on her?
