Breakfast bar Recipe?

Hey ladies-I'm looking for some protein-rich breakfast bars/muffin type recipe for the kids. They eat a very carb heavy breakfast (cereal, pancakes/waffles, bagels) and do get some protein w/yogurt, bacon/sausage (occasionally) but Eli won't eat eggs and I feel like he burns through his energy reserves quickly in the morning. Would they drink a "fruit smoothie" hidden with banana, strawberries, protein powder, plain yogurt (not the pre-sweetened version), and spinach? Maybe you could put them in to-go containers to drink on the way to school?

Another idea is peanut butter or almond butter on a good bread -- like Food for Life bread -- keeps well in the freezer and you can pull out two slices to toast up and then put the peanut butter. I think each slice has 3-4 grams of protein. Pair with some turkey sausage links (my boys love the Applegate Naturals brand), maybe? Would Eli eat "egg in a frame" where you punch a small hole in the bread and fry the egg in the bread? Then he can use the leftover bread circle to dip in the yolk. Or does he just hate eggs? Hmmm, hope these ideas help. :)

ETA: Cottage cheese is another big hit here!! Some people think it's gross (ahem, my husband) but the kids love it paired with fruit or toast or something like that. Super high in protein too.

Elaine's smoothie suggestion made me think of protein shakes. My kids don't eat breakfast - they're just not interested, but every morning they want their "hot chocolate milk" - it's basically milk with Carnation Instant Breakfast. I figure it may not be the healthiest thing in the world, but at least they're getting some nutrients.

If you don't want to do the Carnation stuff, you can make them any sort of "milk shake" and just add in some protein powder. For them it's a treat. And they can drink it along with their regular breakfast and finish it in a to-go cup like Elaine suggested.

Yep! We do Carnation every so often. Maybe I'll try making it with Almond milk for more protein...

Do they like peanut butter? I would just plop a good spread of PB on their waffles/toast.

Have you tried Peanut Butter & Co. products? They have some really delicious peanut butters -- "The Bee's Knees" has honey (K looooves this), and "Mighty Maple" with maple syrup. If it has a little more flavor oomph, maybe they'll be more open to it?

I wish Anya would eat more protein too in the mornings. Occasionally she'll eat a hard piled egg or smoothie. Usually just toast and butter. Will your boys eat almonds?

just did the math on these. if the recipe makes 2 dozen balls, that would be about 12g sugar (from the honey) and 4g protein (from the pb & oatmeal). you could probably boost the protein with a bit of protein powder and cut back on the honey (by 1/2 even).

i put peanut butter or almond butter on adrian's waffles. would they eat that?

what about a smoothie with almond or peanut butter added in? or do you need something you can eat on the go?

These all look great and are pretty much what I am looking for, so thank you! We did protein shakes this morning and he drank about half of it. Hopefully he will be more interested in the coming days!
