stickybear's mom and her boyfriend over for "Nueve de Mayo" tomorrow night. (I was sick on Cinco de Mayo and dude, it was a Monday.) I need food ideas. Le boyfriend is Puerto Rican, and while none of us particularly cares about being super authentic Mexican, I would like to serve something tasty that's a little more authentically hispanic

Unfortunately, while I like beans and squash and think that mixture sounds like a recipe for a great enchilada, both are fairly high in carbs. I'm on a restricted carb diet for my PCOS; while I'm not being particularly strict with it, I do try to avoid carbs when they're not absolutely essential or a really special treat.
However! I also don't mind making dishes that I can't eat, or substituting stuff for myself. So black beans, yellow squash, and onion enchiladas could certainly work if I made myself a salad. :) Thank you!

Empanadas are fun, can be meat or seafood, but are definitely not on the low carb side.
Oh, Picadillo (also considered Puerto Rican)! http://www.tasteofcuba.com/picadillo.html You'll notice a lot of the same igredients as ropa vieja... We Cubans don't do too much in the way of variety ;)
