Nueve de Mayo

Halp! We're having stickybear's mom and her boyfriend over for "Nueve de Mayo" tomorrow night. (I was sick on Cinco de Mayo and dude, it was a Monday.) I need food ideas. Le boyfriend is Puerto Rican, and while none of us particularly cares about being super authentic Mexican, I would like to serve something tasty that's a little more authentically hispanic ( Read more... )

I wanted to skip rice last night with our enchiladas, so we had black beans (canned, to save time) and yellow squash (sautéed with onions). I was really happy with that substitution.

I'm a huge fan of yellow squash sauteed with onions, actually. My parents used to mix if up with shredded cheddar as a side dish. Super yum!

Unfortunately, while I like beans and squash and think that mixture sounds like a recipe for a great enchilada, both are fairly high in carbs. I'm on a restricted carb diet for my PCOS; while I'm not being particularly strict with it, I do try to avoid carbs when they're not absolutely essential or a really special treat.

However! I also don't mind making dishes that I can't eat, or substituting stuff for myself. So black beans, yellow squash, and onion enchiladas could certainly work if I made myself a salad. :) Thank you!

The the enchiladas were cheese and we had the squash and beans on the side, but actually, I think squash and black bean enchiladas sounds seriously good, too! OMG, we are totally going to have to try it!

How about stuffed poblanos or a nice mole over chicken? Hm...

How about fajitas? Serve the ingredients separately and let everyone assemble their own, and put out some big romaine leaves as well as tortillas. You can just make salmon or some other firm fish, or you can do both fish and beef or chicken and let people choose. Also fast, especially if you slice everything beforehand and buy presliced peppers. I actually like fajita bits wrapped up in a lettuce leaf better than in tortillas.

I second the fajutas as a low carb hispanic option. Also, pinto beans are far more low carb/high fiber than black or refried beans.

Ropa vieja is a great dish. It's Cuban, but that's what you're gonna get from me ;) http://www.geocities.com/NapaValley/7035/ropavieja.html

Empanadas are fun, can be meat or seafood, but are definitely not on the low carb side.

Oh, Picadillo (also considered Puerto Rican)! http://www.tasteofcuba.com/picadillo.html You'll notice a lot of the same igredients as ropa vieja... We Cubans don't do too much in the way of variety ;)
