These aren't recipes, but I am a firm believer in added either Naked or Bolthouse Farms juices to a healthy diet. Most of them are fruit puree or puree with vegetables, so it's almost like drinking down your nutrition, and it's healthier for you than strait juice.
For Naked, I recommend any of the "machines" except the Blue Machine, because I don't like Blueberry. Also, their Acai Berry drinks are worth investigating to.
As for Bolthouse, I practically live off the Green Goodness, but also worth checking out is their Berry Boost, C-Boost, and Strawberry Banana.
Both of them also have protein drinks which I love but I prefer Bolthouse's over Naked's, so check out the Mocha Cappuccino with whey protein, or the Vanilla Chai with soy protein.

Lettuce alone sucks. Lettuce with meat and cheese is much better. It turns veggies into a protein-filled meal.
Don't do this more than once a day unless you have very nice poopers at work.

Salad as lettuce alone definitely sucks. Salad with romaine, tomatoes, peppercini, olives, mushrooms, bell pepper, cucumber, and any other colorful veggie is good.

It can be adapted to be quasi-Asian, or quasi-Italian.
For the former, use a base veggie oil, (like canola), add garlic, soysauce, and cinnamon. Add veggies. I tend to get the bags of frozen veggies (Oriental mix, or whatever). Add an egg or some source of lean protein, if you like. (I use egg or tofu, or skip it altogether, but I hear birds are good with it.) Serve over rice or noodles. For the quasi-Italian variety, use olive oil, do tomato, mushrooms, olives, bell peppers, and peppercini. Spices, use garlic and Italian seasoning. Serve over pasta.
The key thing for either of these to remain healthy is to limit the oil. You won't need much, because the veggies will release water anyway.
The Texmati blend from these guys is a good meal all by itself. I add garlic with the water and such.
Oh, and the Progresso hearty tomato soup is really good (but get it on sale).
