Kikkoman's instant tofu miso soup is surprisingly good. It's a little too salty and the texture of the tofu's a little weird, but about what I'd expect for freeze-dried tofu. I should just stop being lazy and make my own miso. Then I can experiment with it. I think miso with udon noodles and spinach would be good ( Read more... )

Hey, grats on getting authorship on the paper. I gather, however, that avoiding excess salt in miso is a very tricky business.

instant ... tofu ... miso ... What are those people thinking? On the other hand, I would be glad to volunteer as guinea pig for you udon-spinach miso experiment.
