I have some colby and some mozzarella... I can see the colby going with the potatoes but not the onions...Perhaps with the right cheese it could be a scalloped potato/onion thing. Mebbe a swiss?
I would get some Gruyere cheese and make a type of potatoes lyonnaise. Boil potatoes, slice into 1/4-1/2" inch chunks, stack with sliced onions and chopped garlic and cheese. Cover w/ aluminum foil and bake.
Or-- I would make mashed potatoes. Get milk/butter/whole cream, boil potatoes, roast garlic and mix all together w/ salt & pepper
Or-- I would make curried potatoes. Chop garlic & onions, chop baked or boiled potatoes, sear curry ingredients, add onions & oil, add water & yogurt & add potatoes. Cook until yummy.
Or-- I would make pirogies. Stuff pirogies w/ garlic mashed potatoes and stir fry with onions & butter.
Or-- I would make coconut curried potatoes. Same as Curried potatoes, but add coconut milk instead of yogurt/water mix. Spice w/ lemongrass, if desired.
