super interesting, as I have been having terrible headaches recently, which I will attribute mostly to life in Cairo...but I may look into some of these ways to change my diet as well.

Yeah...I think the Middle East will do that to you. My headaches got worse when I moved here. I just try to drink gallons (or litres?) of water a day, then they tend to be better, but I have no better suggestions than that...:)

one quick recommendation: if soy milk freaks you out (and it freaks me out UNLESS IT'S IN CEREAL, so take heart), a soy-rice blend might taste closer to cow milk.
you also may be able to pull together some salads, although i'm suddenly totally uncertain about the availability of lettuce where you are. ogod my social studies teaching mother would be humiliated if she knew i was admitting this in public.
I've never seen soy-rice milk here. I've been reading some food blogs and a lot of vegans seem to recommend rice milk, but I've not found it yet. Maybe one of the health food stores has it. I'll look into it:)
Lettuce is available. I'm always depressed about it, though because usually you have to dig pretty far inside to find good leaves and I just have very little patience for it. I miss lettuce where the whole thing is good. Or maybe you throw 2 leaves away or give it to your rabbit. Occasionally I'll buy it if I'm really in the mood, but I buy a lot of other veggies first. The zucchini here is amazing but I'm not very creative with it as we used to either grill it or put it in a quiche type thing.
Seriously, this whole thing comes down to the fact I've never stepped outside my food comfort zone. I love trying new food, but I cook the same things over and over and over.
Holy Crapola that's a bitch of a diet. I'm with Katie and the freaky soy milk bidness, but I'd say just think of it as adding cream to your oatmeal. To me I do better if I don't try and make stuff like that 'replace' a food I'm really familiar with

Thank God for sweet potatoes. I probably wouldn't be able to do this diet without them. Someone told me the asparagus is coming into season here. I'm so excited. I don't think I've had it in like a year, but it's one of my favorite veggies. Oh, roasted veggies, I'm coming for you :)
I have yet to see rice crispies here, but when I do, I'm making a delicious dessert snack. Mmmm:)
I do know Elliot. I'll hit him up for some of his favorite recipes. Thanks!
I do love Indian food. My mom's boyfriend is Indian and he has taught me to make a few dishes. I'll see if I can find a few that fit the bill.
I can get frozen edamame. We have them in class a lot because they're a quiet snack. I looove your stir fry suggestion. I'll be headed to the veggie stand tomorrow to get my stir fry on!
I know, right? I (usually) start every dish with garlic, onions, and add tomatoes of some sort. Those are the hardest ingredients to part with, I think.
